I will leave some sneaky saves and if it gets too bad I can always pop a pill and go back to the first ending and reload and get the new ending in a lower difficulty lol.

I'm loving the game, I finished my first run last weekend and after i got the UFO ending. I do expect 3 more full runs for the rest of the endings at least.
I don't think you can change difficulty mid game, perhaps you just set the puzzles or combat to lost in the fog but not the other? 🥲 but either way in your save it shows the difficulty it is on.
