Vellum holds up well (like hundreds of years well) 17th and 18th century cotton rag paper depends on how the documents were stored, and it is a bit hit or miss, but generally 200 ish years on before it starts to eats through. Wood pulp paper has even less time (100 ish years)

Oh what an exciting thing to experiment. Also, as an archivist, oak gall ink makes me sad because the acidity will eventually make it eat the paper. It does, however, sometimes only eat the paper where the ink is so you get phantom letters as very beautiful holes.
