Went to SIERRA VEINS in London, really good gig!
A pair of cooling wire trays filled with mini cakes and mini bundt cakes, plus a slab of leftover cake that did not fit in the moulds. They are covered with a light sugar glaze and lots of coconut flakes
Baked some coconut lemon cakes for a local hospital charity bake happening at work tomorrow. Don't mind the big slab on the right, it's the test piece 😅

a dessert composition with the following: - Homemade cookies with the pistachio oil used for fat-washing and dark chocolate chunks - pistachio ice cream with crumble of fresh pistachio on top - tea light warmed dip, half milk and half pistachio liqueur, with more fresh pistachio crumble - classic dry martini with the fat-washed gin, rimmed of course with fresh pistachio crumble
Ok this is a tad more than meets the eyes: I got some roasted pistachio oil and fat-washed gin with it, then went all-in for a pistachio dessert composition, details in the alt-text.
It came out really good, even if I over baked the cookies a bit.

Oyster mushrooms, hand for reference.. they ended up grilled on coals in the cast iron, with hard cider, olive oil, salt, pepper chilli powder, freshly grated Italian wet garlic and fresh rosemary. Delicious.
