Dr. Kerry Cooper presents a webinar entitled "A One Health approach to addressing food safety issues." Dr. Cooper is an associate professor in the School of Animal and Comparative Biomedical Sciences at the University of Arizona. Over the last few decades, there has been a dramatic increase in the consumption of fresh produce in the U.S., which has led produce to becoming the number one source of foodborne outbreaks. Produce safety represents a major One Health matrix, classically characterized in 2018 by the largest Escherichia coli O157:H7 outbreak in U.S. history. This outbreak involved a large cattle feedlot and irrigation water canals that were used to irrigate romaine lettuce fields, and resulted in 210 illnesses, 96 hospitalizations, and 5 deaths. The Cooper laboratory employs a variety of different approaches to address the distinct facets of produce safety using a One Health matrix to improve food safety overall for U.S. consumers.
