Heat 1/2 cup of olive oil Grind 25 cloves of garlic with a mortar & pestal (or use more modern methods) Gently simmer over low heat for 10-15 minutes. The goal is to soften and make the garlic dissolve into a fragrant slurry but NOT make it change color from the heat. Low & slow
Add 120-150 grams of anchovy filets, drained (usually the whole jar). Rinse well in hot water first if you want to fine tune the salt level yourself or are watching your salt intake. Slow mash into the oli & garlic with a wooden spoon as you continue gently simmering. Probably another 10 minutes.
And a 1/2 (1 stick) of butter. I use salt-free but you do you. Stir well and it's basically done.
Use a wider, shallower glass dish than I did if you have one available. It's easier to get the full mixture on your dipping items. Some recipes say after you melt in the butter you should chill the Bana Caude in the fridge for at least 2 hours, then reheat for seving. I don't have the patience for that.
