I usually blanch or sautΓ© the kale before I add it to the skillet.
One of my favorites dishes is kale and sweet potato hash, made with fresh kale from the greenhouse and purple sweet potatoes from last year. The sweet potatoes have a dry flesh that gets sweet when roasted in the cast iron skillet. I add the chopped kale at the end. #FoodOnFriday #kale #gardensky

While on Maui recently, we had dinner one night of roasted eggplant, okra, baby bananas and pineapple along with macadamia nut crusted mahi-mahi. Everything was local including the fish. We love eating local food whenever and wherever we go! For #FoodOnFriday #Maui

For #FoodOnFriday, our persimmon tree is loaded this year, and I used some to make a batch of persimmon cookies last week. They are soft and moist, and the consistency is really a cross between a cookie and cake.

For #Caturday, my cat EW, circa 1999. My neighbor Lisa took him in as a stray and named him Edgar Winter. When I asked her why the name she said "because he has long white hair and is kinda freaky looking". Her cat Josie didn't like him, so he wound up with me. He was a sweetie, and the name stuck.
