Churn the ice cream mixture without the chocolate.
Spoon half the churned mixture into your container, then add half of the chocolate. Mix the chocolate in. Then do the same with the second half of the mixture and chocolate. Refrigerate for five hours to overnight.
Note: I usually use a jug to mix my ingredients as it's easier to pour into the ice cream churner.
Strain out the leaves so the milk is alone in the jug. Then add 600ml (just over two cups) of cream, I cup of sugar, and a teaspoon of vanilla extract.
Heat 2 cups of milk so the temperature is hot, not boiling.
Then pour milk over the mint leaves and leave for an hour. When it's cool enough you can put it in the fridge before the hour is up.
Pick apart 2 1/2 cups of fresh mint (you don't have to be particular in this task as you will strain all leaves/stems out later) and put them in a bowl. I tend to wash the leaves once they are in the bowl.
I've perfected a really nice mint and dark chocolate ice cream. So I thought I'd share the recipe. It doesn't taste like toothpaste, and has a light refreshing flavour.
Grate several squares of refrigerated dark chocolate.
