Bosses are basically just a matter of parrying as much as possible and being patient for an opening to do a couple hits or use a talisman on them. I think I had the most issue when I tried to be aggressive. It's pretty rough when you have less movement ability in the beginning though

It definitely took some time to get used to, but I never really got the feeling that it was unfair. Just take some time to really get used to the parry timing. I struggled a lot, but learning boss patterns etc was really satisfying by the end.
