Had myself a wonderful work out today, this was my post workout meal.
Brownie batter baked oats, they were SO GOOD!!!

Oh I forgot to say in this Enchilada Casserole, I made my own homemade tomato sauce and oh my god it's so much better than store bought!

Made some enchilada casserole for the week. Cannot wait to dig into this.

This might be my favorite thing I've ever cooked. Honey Sriracha salmon bites with cucumber salad and crisped rice. It's so good!!!

Since you all loved my tiramisu Overnight Oats, here's another dish I made that I'm really proud of. Fettuccine alfredo, the alfredo sauce made with cauliflower and parmigiano reggiano, pecorino romano, and milk.
