A photo of Datemaki, a traditional Japanese rolled omelet, placed on a wooden cutting board. The Datemaki is yellow, fluffy in texture, and evenly sliced. The beautiful rolled layers are visible, symbolizing its significance as a dish often enjoyed during Japanese New Year celebrations.
Happy New Year!
Datemaki is a traditional Japanese rolled omelet, sweet and fluffy, often enjoyed during New Year's celebrations as part of Osechi cuisine. Its golden color and delicate texture make it a festive treat!
Making Datemaki at home brings so much joy and happiness! #๐
A bowl of Tenshinhan featuring a fluffy yellow omelet floating in a clear, golden dashi-based broth, garnished with finely chopped green onions. The dish is presented in a patterned bowl on a woven placemat.
This is Tenshinhan, a Japanese-Chinese dish with a fluffy omelet over rice. Instead of the traditional Chinese-style sauce, I used a light dashi-based broth for the sauce. ๐ฅ #๐
The dish in the photo is 'Tsukimi Soba,' soba noodles topped with an egg. Traditionally, a raw egg is added to the soup, and the heat slightly cooks the whites. Since I'm not good at this technique, I separately cooked the whites to make them fluffy, like a cloud. ๐โ๏ธ #๐
A bowl of soba noodles topped with a raw egg yolk and lightly cooked fluffy egg whites, commonly known as 'Tsukimi Soba' in Japan.
In Japan, there's a long tradition of appreciating the beauty of the moon. The egg yolk resembles a full moon, and in autumn, dishes with raw or sunny-side-up eggs, like 'Tsukimi' (moon-viewing) dishes, are popular.
Egg paste is spread on toast, with two slices of boiled egg on top. It looks like a face, with the eggs as eyes and dried basil as the mouth.
Since it's hard to always share uniquely Japanese things, Iโll just relax and start posting the eggs I usually eat. ๐ณ
Thanks! I'll try it๐
That sounds absolutely delicious!! I've never tried Shakshuka before, so I definitely want to give it a try ๐คค
A plate with a vibrant sunny-side-up egg on toast. The toast is spread with basil paste, and the bright orange yolk in the center catches the eye. In the background, there's a cute frog mug with the words 'The King of the Frogs'.
Iโm always eating eggs, but itโs been a while since I last posted. How is everyone doing?
Recently, Iโve been into this method of cooking sunny-side-up eggs: quickly frying only the whites at a high temperature, then gently cooking the yolk at a low temperature afterwards. ๐ณ

Thanks for the warm welcome! I guess itโs time to hatch some new eggs!

Steamed white rice Osumashi (Japanese clear soup) Dashimaki Tamago with grated daikon radish
There are many egg dishes out there, but all things considered, my favorite might just be Dashimaki, which is a Japanese rolled omelet made with dashi. Having Dashimaki with grated daikon radish for breakfast is truly wonderful!
Digging into the flavors of Tenshinhan. ๐ฅ
Tenshinhan is a Japanese-Chinese dish with scrambled eggs, often mixed with shrimp, crab, or mushrooms, on rice. It's topped with a sauce that varies by region: sweet and sour in eastern Japan or broth-based in the west.
I'm all about just a hint of green onions and that western Japan broth. ๐

Cooking up bacon and a fried egg
Bacon and egg muffin
While I was making dashimaki, my wife and kids were whipping up bacon and egg muffins. Mmm, looked tempting! ๐
rice, miso soup and dashimaki
dashimaki on rice
Professional dashimaki (or tamago-yaki) is top-notch, but there's something great about customizing it to our own taste. Today, I added a hint of sweetness using mirin, a sweet Japanese rice wine for cooking, to my dashi-based mix, a traditional Japanese broth. ๐ฅ

Egg sushi
Today, I went to a sushi restaurant and had tamago-yaki and egg sushi. While homemade tamago-yaki is delicious, the freshly made one by a professional chef was indescribably tasty!
In the process of making the noodles
Noodles made entirely from eggs
The finished noodle dish, known in Japan as 'Reimen' or 'Hiyashi Chuka'
5 seconds before eating the noodles
When I was young, I always wanted to make and eat a lot of noodles made entirely of eggs, but I somehow forgot about it over time. Recently, I remembered and tried it out. Noodles made of eggs, cucumber, ham, tomato, and a boiled egg in the center. The ultimate combination!
