That’s exactly how I make mine and I hate hauling it out, so now I do 4 cups at a time and then freeze each portion I need. When I reheat I just add a little bit of water and voila, perfect.
Freezing and reheating rice increases resistant starch, which acts like fiber to slow digestion and help prevent blood sugar spikes—making it better for insulin resistance.

I’m glad I watched an episode of Martha Stewart where she talked about making rice and freezing it. It has helped with meal prep IMMENSELY because I get terrified of rice in the fridge too long.
Also, apparently freezing it changes the starch and can help with insulin resistance, big win.
