I think the problem is actually that most "big" cats are 300+ lbs (twice the size of even great danes) and the ones that aren't are very solitary (panthers, leopards, etc) so impossible to socialize.
There might be a bite factor involved but I don't know any details about it.

The biggest cheetahs get is 120 lbs. They're technically not much more dangerous than a large dog and about as social. They'd be a prime candidate for domestication if their health and diets weren't so fickle. But it is nearly IMPOSSIBLE to keep a cheetah healthy in captivity.
