Processing per se is not necessarily bad, and potentially better if it's plant-based. Not everyone wants to eat lentils with rye bread. New plant-based alternatives help more people move to more healthy & sustainable diets. A good thing.

Peut-être. Je trouve plus impressionnant ce que VG Pâtisserie fait au 123 Bd Voltaire—de la pâtisserie fine végétalienne qui ne cède rien à la traditionnelle. Ce n'est pas là qu'on va résoudre le climat ou le bien-être animal, mais si c'est possible en pâtisserie, changement est possible ailleurs.

Yes, but not thinking (or here rather communicating) out of the box means we're stuck in the box. There are great plant-based meat & dairy products out there. Some may try them and realize they can live with minor trade-offs (or even prefer them - good taste, easier to digest, better to store...)
