I frequently get enough of a pause in work to briefly freak out about not having much of a social life, dating life, furry life, go to cons, take vacations etc. And then the break is over and I have to get back to work or numb my brain with something.

Depends on the kind of bread. I think once I got used to it after 5 or 6 loafs of bread, they turned out more consistently. I also try to do measurements by weight. Even then, I still see variations in how things turn out.
My latest venture in baking is a Dutch Chocolate Almond biscotti.
