I think people confuse recipe adaptation for cultural appropriation. As long as you're not claiming "This is 100% authentic satay" when you're using tahini (or other such substitutions) then I think it's fine. Don't feed the trolls and ignore the haters.
if you're not an idiot and taste peanut butter and tahini side by side you'll notice how similar they are.
I have absolutely used peanut butter in hummus when I didn't have tahini and if probably consider using tahini in satay if I was in a bind.
