After you manually change all those Google contacts, the phone part is easy. You should look up this process because I'm just typing while eating a sandwich.
but on an iPhone you just disconnect Google from iPhone contacts, take a breath and reconnect it. Then your phone syncs again ... easy
Google's contacts is the best tool. You can remove people from "contacts" so they no longer sync to your phone, but the contact is still in Google.
