If you are clever doing sound like broccoli. Cut the florets off and dice the stalk. Use the stalk. Add the florets in later as they don't take much cooking and go bitter if overcooked. For celery soup I'd always peel it. Stops it being stringy

Depends on the veg you've used. Ie if you've used celery and not peeled it then then you are better to sieve it after blending. A liquidiser will give you a good smooth finish. A handheld one never is as smooth. But as I said if you sieve it it'll be really smooth. Just Depends how you want it
