Most folks I know who work in Churches take their Sabbath a different day since Sunday is so busy. I know my Abbess takes Mondays.

There are Benedictine dispersed communities. I.E. members can live in their own homes.
In our community the option you speak of is people who have already taken vows, think RB: 1.3-5.

Have you discerned any dispersed Benedictine Communities? There are a few in Communion with TEC, or are you looking at establishing a residential community?
