I picked up a Pinter and I gotta say. I’m very happy with the first beer. Winter slumber had nice caramel malty tones to match the ginger spice.

Gallon jug filled with pre-fermented Tepache. It's a gorgeous dark brown with pieces of pineapple rind floating and bobbing about. Similar to kombucha as it's a mix of wild yeast and bacteria that ferment it. But it has it's own unique history from Southern Mexico and Central America.

Stage 1: simmer pot
Pint or so of water
3 small piloncillo cones
Cinnamon stick
Tbsp ginger
1 point star anise
Cardamom pod
Allspice berry
2 cracks black pepper
Orange peel
Whatever warm spices you want

Some times an easy one is nice

I was skeptic….but damn I’m convinced. Imma be all over this next summer

Hoppy brown ale! Was expecting fall/pumpkiny spices but got hit with a lovely piney bitterness and citrus hops
