First cake of 2026:
Sacher torte cake
Chocolate cake, thin layer of apricot jam, chocolate buttercream, chocolate drizzle.
Ugh
Looking back on 2025, my obvious bright spot was proposing (successfully!) to @epicillusion.bsky.social.
Turtle cheesecake: creamy plain cheesecake on graham cracker crust, house made salted caramel sauce, toasted pecan, dark chocolate drizzle and Malden salt.
Chocolate mint cake: chocolate cake layers, creamy chocolate buttercream, Andie’s mint chocolate crumble.
Apple medley tarte tatin: pink rose, opal, and Granny Smith apple slices, house made salted caramel sauce, puff pastry, and fresh made crème fraîche.
Coconut crème pie: buttery deep dish tart shell, coconut pastry cream, chantilly cream and toasted coconut flake.

The past few months seem to be a blur of everything happening. Taking a breath before the new year begins and realizing I have accomplished so much in the year along.
1 coconut crème pie that is semi dairy free (the crust has butter in it).
And 2 roasted kabocha pumpkin pies.
2 deep dish pecan pies which weighs about 6 lbs per pie…
2 deep dish apple pies: pink lady and green apple blend filling, lattice and turbonado sugar. Served with salted caramel sauce à la carte.
Spent the day making 9” deep dish pies from scratch…
3 peanut butter pies: fresh chocolate crumble, peanut butter mousse, whip cream and reece’s cups.
Make 24 quarts of soup hoping it’ll last for 2 days. I go to clock out and see only 3 quarts of soup left.
FML.

My career in laminated doughs started 16 years ago and is still ongoing. There’s always something new to discover and a new technique to learn. So never stop enjoying the things you do.
When we went to check out, the bagger asked him if he really said that to a stranger… then Chad points to me… I approach and ask if they’re talking shit about me…
and we left the store while the bagger was confused. Least he had a story for his coworkers.
