What would be great for you would be if Apple brought out an M5 Mac mini. Cheap bit of kit to tide you over for the moment that would have the GPU neural accelerator bits, until the OLED MBP came out.
Probably because of the aggressive cost-cutting to make it. But there could be other factors.
E.g. If Apple were to introduce cellular to the MacBook lineup, it would be in a premium model first, not the absolute cheapest model. Gives customers more reason to go for more expensive options...

And yes, you're gonna need to start a workout in an app on the iPhone and keep it in Bluetooth range (Not an issue for around a gym or courtside, but you're gonna need to bring it along if you're going for a run...)
