We've made a custom physics engine running a form of position based dynamics (PBD) on the GPU (don't know if there are any pre-made solutions for this out there, but maybe!)
We're looking to make it as a fully-fledged sandbox game initially, but we have ambitions to expand it into something more in the direction of an survival/adventure game in the futureβ’
(I like the plumber simulator idea though, haha)

Have spent some time making our game run natively on Steam Deck. Really nice platform to develop on, and I love the built-in performance overlays (confirming we're keeping the GPU quite busy)
The touch screen is kinda fun to play with also!
