Mixer Brush! To get the most "1-to-1" of your image in the brush tip, you can set the preset to "Dry" or "Very Dry" and it takes a pretty exact image.
Greg Rutkowski uses that method a lot for his canvas textures in his digital work, and I'm a fan of it as well to get some nice, natural grit!
