A really easy hack if you're going to be using mince a lot (I know you're on a budget) is that if you get half and half beef mince and pork mince it stays way moister and juicier than beef on its own. Pork can be cheaper too, at least here. Works for anything you'd use straight beef mince for.

And meatballs. I love all kinds of meatballs. Much more than burgers. In tomato or avgolemono sauce, I can link you recipes for things like keftedes or soudzoukakia (can you tell my family's Greek?) if you're interested. I also experiment with Thai or Vietnamese style spicy broths and a few veges.

I make big batches at the weekend and freeze them in individual plastic containers so I can either take one to work for lunch or just pop one in the microwave for dinner when I'm tired. Bolognese type sauces too. Moussaka and other big tray meals using beef or lamb mince, also divided and frozen.

I like stews in winter, get chuck steak or similar and do bourgignon (red wine and onions and mushrooms) or steak and kidney pie (I know it's divisive but I love offal and it's so good for you) or cheat's curry (just get a really good jarred sauce and add meat and potatoes and frozen peas).

Rib eye is my favourite beef steak, I like it rare so I just toss it in the cast iron for like 3 minutes each side. I usually just eat it with Greek salad which I love. As a NZer I have to say lamb - I'll get a leg if I'm cooking for family/friends and roast it, chops if it's just me and grill them.

Me too. I know I still have a few childhood copies because I saw them rather battered in a junk box* when I moved house recently, but I might have to start hunting small town secondhand shops.

I always just make it the way my grandma did, and if you want it thicker you can just hang it for longer till more water comes out. And even longer if you want to make labneh.

You can just use a few tablespoons of your favourite to get started, so treat yourself to a good one and use some of that. Then always just hold a bit back at the end of each batch.
