80/20 for sure. Or more if fancy meats in it. This one turned out a bit more lean than I expected. Was a custom blend from a shop - told me it was super fatty - but nah.
This was sorta that way. Did reverse sear since they were thicker with some brisket meat in there. I’ve gone zero sear too and as long as the fat content is strong, it works well! But you do miss out on the drippings flare.
