That will work. An SSD based portable may make the process a little faster. Will the data from the several computers total more than 1TB? If so, and if the data is important to you, you might consider a drive larger enough to hold all your data.

The “presumption of regularity” should be dead now. To me it should have been dead 20 January. With Unitary Executive being in vogue, having a convicted felon with issues telling the truth as sole figure in whom the "executive Power" is vested should have ended it then.

Is pen testing what you want to do or is forensics more your style? There is a tremendous amount of depth to either of those fields. Enough that very few people are masters of both.
Have you learned enough about the field to know what you want to specialize in or are you still familiarizing?
What part of cybersecurity are you trying to learn? Are you trying capture the flag exercises or competitions to get better at solving those kinds of problems? The mix of tools you find on Kali lean more towards penetration testing/red teaming.
