Exactlyyyyy, I just did piano warmups and scales as my "structure" for about 6 months or so, it helped so much. Didn't even learn any songs, just ya basic stuff and now I can flow thru a melody when I get an idea pretty easily knowing what's what without thinking too hard
Music theory is really deep, but for it to be super effective you don't actually need to know much! If you just learn how the circle of 5th work and your basic major and minor scales you can do so much with that
Jazz guitarists are so funny to me. The vast majority of the set they play is light chords you can barely hear. Then when they start their solo, it's always the most insanely complex music theory fever dream of a solo, then they just go back to being in the background like nothing ever happened

If you want something hyper customizable, virtual DJ can be configured in so many ways and there are a ton of extensions and skinks for it. It plays with any midi device pretty well too, every control is mappable
