don't stir the sugar as it's melting - just rotate the pan.

Warning: be careful - the caramel gets very hot; take care when you add the potatoes!

And then: give it time - it takes a while of gently moving the potatoes around before they are well covered in caramel. (3/3)

good luck - they are delicious! adding to what others have said already: yes, the trickiest part is the caramel. You want all the sugar to melt before you add the butter, but without burning. To achieve that, make sure the sugar is distributed as evenly as possible in your pan (1/n)
