Yeah cymbal bleed is a pain even in big properly treated rooms. Have you tried the multiband expander trick for snare and tom close mics where you basically gate only the mids and highs? Helps a ton with bleed!
I've never tried recording cymbals separately! I have done everything but kicks and then MIDI'd in the kicks later though lol.
I’m not dogmatic about tools but when it comes to editing and tuning I do it all by hand so it doesn’t sound artificial. I also don’t tune every performance or every singer, some need it more than others.
