In the same vein, I just made a jar of pickled red onions this weekend. I used lime juice instead of vinegar, one onion, seven fresh squeezed limes worth of juice, two teaspoons of kosher salt, and a quarter teaspoon of sugar. Had 'em on fish tacos last night, amazing!

Frosty!

Raining all day here in NorCal, nothing to do but bake! Made two loaves of focaccia this morning, peanut butter cookies in the oven right now. Kitchen smells amazing!

A trick I learned from Americas test kitchen; spread out a couple cups of all purpose flour in a 12" cast iron skillet & toast it @ 350, stirring about every 10-15 min. until it reaches the color of cinnamon. Mix with the stock of your choice and stir it in a couple minutes before the finish.
