This took... way too long to bake. I think something is wrong with our oven (not keeping in heat, maybe?) but I didn't think it would require almost an hour and a half for the apples to get soft.
100% with you on savory meats + raisin bread. It reminds me of my favorite bagel combination (cinnamon raisin bagel, cream cheese, and either lox or, in a pinch, ham)

I did end up roughly doubling the bread mixture, because that's how much freezer-sad bread I had. Figured it probably wouldn't hurt anything, lol

Thank you for the suggestions! Happily, I bought more apples that my partner ended up also not eating. (He's the raw apple enthusiast; I have to eat mine well-cooked.) So I ended up with 3 pounds of apples anyway! lol

After having this sat in the fridge for a few days and trying to eat it, I think it was just too fluffy for me. Not enough fat to hold it together, so it was somehow TOO tender. (It also hit my blood glucose like a brick, lol, due to total lack of fat or fiber)

Oh yeah, right there with you - I am definitely in the camp of "if it looks and smells fine, it will probably be fine" for anything with a best by date. I was just happy to reclaim that pantry space, after 4 years of "maybe I'll get around to that special project I bought this for"! ๐

This does make me wonder if there would be some way to get the molasses flavor in, though.
It was nice to bake something that required absolutely ZERO measuring or real foreplanning. The only dishes (other than the baking dish) were the mixing bowl and spatula, and those weren't hard to wash, unlike a jillion measuring cups and spoons. (I sprinkled in the extra spices according to vibes)
As advertised, the cake is VERY fluffy with a delicate crumb. It's sweet enough (and has so little fat in it) that I decided eat it like a muffin, with butter rather than frosting โ but spreading even very soft butter on it is an adventure, lol. (Might be good with cream cheese?)
This ginger beer is VERY gingery, plus I added extra spices to the cake to make up for that best-by date, lol. It ended up tasting pretty much like gingerbread, but without the roasty-bitter molasses flavors. I like it!
It rose just fine, and probably only fell in the center because it took MUCH longer to bake than the 35 min called for (I lost count of how many "just 5 more minutes" timers I set) so I kept opening the oven and jostling it.... Oops ๐ Oven probably needs calibrating.
We had some spice cake mix that had been sitting sadly in the pantry (best by date was in *2022*...) as well as some too-strong ginger beer lurking on the top shelf of the cabinet, so I decided I could probably make a dent in them both by making this recipe! :D

I'm guessing that "duckling" refers more to a younger, smaller duck? (as opposed to an older one that would be tougher/more suited for stewing)
