Finally got a good bake on this one after numerous variations. It starts as a biga using about 40% of the total flour (KA bread flour). The final dough is a mix of bread flour, spelt, and Bob’s Red Mill gluten flour to counter the spelt tendency to flow

At this spot, three tectonic plates come together, and since they're all moving in different directions and at different speeds, there's a lot of activity. This area has M6+ earthquakes more often than anywhere else in California.

This is from The Rye Baker by Stanley Ginsberg, a must have book for rye fans. It’s an 85% hydration rye dough so really hard to wrangle. Like shaping glue

The recipe is great as is and is amazing for PB&Js, but it’s a very soft loaf. For a firmer structure reduce or skip the dry milk and reduce butter to 2 tbsp
I usually substitute a multigrain flour for the whole wheat, and try different grain mixes. Experiment!
OUR RECIPE FOR Harvest Grains Bread 21/2 cups (298g) King Arthur Unbleached Bread Flour 1/2 cup (57g) King Arthur White Whole Wheat Flour 1/2 cup (74g) King Arthur Harvest Grains Blend 11/2 teaspoons salt 21/2 tablespoons (28g) sugar 2 teaspoons instant yeast 1/4 cup (21g) nonfat dry milk 11/4 cups (283g) lukewarm water 3 tablespoons (43g) butter or vegetable oil (35g) • Mix and knead ingredients - by hand, mixer, or bread machine set on the dough cycle - to make a smooth, elastic dough. Cover and let rise 1 hour (or allow the bread machine to complete its cycle). Dough will become somewhat puffy, but won't double in bulk. • Shape into loaf, and place in lightly greased 81/2" x 4 1/2" bread pan. Cover and let rise 1 to 1 1/2 hours, until crowned about 1" over rim of pan. • Bake in preheated 350°F oven for 35 minutes, or until center registers 190°F on a digital thermometer. Cool completely on rack.

I like to bake this in an uncovered Pullman pan as slices from the taller loaf are a better fit for our toaster
