Would you believe I managed to get them to roll pretty easily by putting the eye bones ridiculously far off to the opposite side? In the third image, the set of bones by the left eye is the set that controls the RIGHT eye, etc

Tried out the Marvel Rivals method for hair- what I assume it is, at least- it's pretty good!
The final image has an alternate body style that was in the earlier designs- I'm still not sure which one to go for.
