To get real precise with it theologically, it might be best to call God un-binary, but I think pointing out how humans are made in the image and likeness of a gendern’t being is fine and it gets real clunky when you put more words in there.

I mean, the official Catholic teaching is that we don’t actually know God’s gender because God is so unknowably beyond us that we can’t even begin to fathom the facets of His nature but we use He because it’s easier to understand and it’s practical. That’s what they told us in Sunday school.
