I dunno either now! But I know with strawberries it’s only about 30mins after harvest that enough of the sugars have converted to starch to make them taste COMPLETELY different to how they taste freshly picked. And it’s quite a difference.
Maybe dragonfruit are the same?

Apparently eating them freshly picked is a completely different experience. Like the difference between fresh and tinned asparagus.
We lose so much by having food transported long distance and flavour is a big loss due to sugar conversions.
