Actually, that's not quite true! About half a million years ago, our ancestors were asked what language they'd like to speak today and many replied just speaking would be fine. And here we are.

Just thinking about it is causing me anxiety.

I think the conscious self likes to feel it knows what's going on, but maybe it's only a very strong tendency. Maybe experiences simply can't appear to be incompatible with themselves at the centre of our attention, but who really cares around the edges?
