I tolerate eggs and small amounts of sugar with no problem. Cinnamon and other warming spices have also been ok for me in small quantities. Yum!

GF/Low histamine modifications

Substitute/Change:
Reduce to 1 c raw sugar
Change to 1/2 T vanilla powder
Swap flour for:
- Scant 2 c almond flour
- Scant 2 c GF flour
1 1/2 t salt
Use 1/2 c olive oil, 1/2 c veg oil
Swap cinnamon for 1 T Penzey’s pie spice

Mix and bake as directed

Wanted to make zucchini muffins. Needed to make them gf/low histamine (in accordance with my current restriction list—histamine bs is hard. YMMV.)

Started with a friend’s recipe, then made modifications — and it worked! I’m getting better at making things I can eat!
