Salt it either at least 45 min or less than 3 min before cooking (both sides), cook on a medium heat flipping frequently to brown it evenly, use a meat thermometer and take it off the heat when it reaches 60C internally, then let it rest for 5-10 min before eating.

More cuts at BSI are proceeding without a clear strategy, says scientists association.
Another 86 (!) scientists gone. These were voluntary redundancies, but very hard to not assume it's because they find it hard to see a future for their work in the current AoNZ science system.

people wiiiiiiiiiiiiiiiiildly underestimate how much research cannot be done on a computer. like yeah you can use the computer for the data analysis but you do in fact have to do the other bit (data gathering) first. hammer, nails, etc

Good article, but the framing is wrong. There is not a dearth of interest in taxonomy. There is a scarcity of funding and positions, which is a deliberate choice by funding agencies and institutions. The youth love taxonomy! It's the olds that are failing to meet their passion!

Apropros of nothing, updated Wellington south coast water sampling results (through Sunday) are available for people to look at and consider themselves whether this represents a concerning pattern or not. NB: a result of <4 means coliforms were undetectable with the testing method used.
