The conflict has spread with other nations and militant groups interceding, so terms like war in the Middle East or conflict in the Middle East may be most accurate, depending on the context. Rather than relying on labels and shorthand, aim to describe the situation fully. Lowercase the word war. AP capitalizes that word only as part of a formal name.
