Sous Vide Update 4:
All done, letting it rest while I make a gravy/sauce out of the jus with a simple roux. I mashed up the tomatoes and then ran everything through a strainer.
Final pics coming. I also made some sous vide matchstick carrots (185ºF for 50 mins) with butter, brown sugar and rosemary

After watching F1’s P1 and P2, I have come to the conclusion that 2026 is going to be a wild shit show, AND I LOVE IT.
I am HAPPY that reliability will be an issue. I am HAPPY that slow (~4 secs off pace) lappers may be an issue. Less predictable outcomes. Anything can happen.

I use a Ziploc Freezer bag and the water displacement method for sous vide. I also use clips to hold the zipper above water for added security of no water leaks. This will now go for ~48 hours.
145ºF should be about a medium texture and finish.
