I'd suggest looking for iPads on Backmarket. They've been pretty good for me so far. A 2022 iPad Air would cost you around £300. I mention that one because it's in-between the standard iPad and the Pro, so it's a good all-rounder. You can get an Apple Pencil 2 on top of that for around £60.
