1 onion, 2 tablespoons oil or butter, 2 carrots, 1 large potato, 1 15oz can tomato sauce (or 1 pound fresh tomatoes), 1 pound of your mixed greens blend of choice, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1 tablespoon curry or garam masala or whatever powder you like Rough dice all vegetables. Saute onions in oil until browned. Add vegetables except the greens and tomatoes, then saute until you see some color on them. Add salt, pepper, and seasoning, saute until fragrant. Add greens, cook until wilted. Add tomatoes. Add like half a cup of water, then let simmer until everything's softened and blend until smooth. Simmer til thickened, taste for seasonings. What you've got now is basically a saag/curry base that I make a couple batches of each week and use for fucking everything. Want soup or chili? Thin it with stock or juice, toss in chunks of whatever you want, let it simmer. Want a dip? Just mix some with sour cream or greek yogurt, or add some hot sauce and use it like a salsa. It's great with rice or as a pasta sauce, or added to casseroles, on eggs, just fucking drink it who cares the whole pot is like 700 calories max. Also you can just add whatever other vegetables you like, I usually include broccoli.
