Because if you have one of those re-circulation hoods, you're keeping all the moisture from cooking inside, and are you really replacing that filter?

Nothing makes me happier in an application process than when the take home test specifies they really value my time, and time-box it to a very reasonable amount of time. When the thought process and structure matter more than the end result, you know they're doing their interviews well.
