One Christmas I used a dozen eggs, 2 pats of butter and half a bottle of white wine vinegar trying to make hollandaise on Christmas morning for eggs Benedict, and still ended up with a runny mess. Now I sous vide my hollandaise on Christmas eve, and reheat it while I poach the eggs. This is the way.
