Even that isn’t nothing. If you pay with crypto there is a transaction recorded on the blockchain that allows authorities to track the blockchain records. If you pay cash they have date/time/place/amount.
You absolutely do in order to comply with financial reporting requirements. Every transaction has to be recorded in a way that allows the counterparty to dispute it and roll it back. If you can’t associate the transaction with an account, how do you handle dispute resolution?
Or “Thank you for your payment.”

You can’t anonymize the credit card data and it’s association with the account and still associate the payment with the account.
