Even that isn’t nothing. If you pay with crypto there is a transaction recorded on the blockchain that allows authorities to track the blockchain records. If you pay cash they have date/time/place/amount.

You absolutely do in order to comply with financial reporting requirements. Every transaction has to be recorded in a way that allows the counterparty to dispute it and roll it back. If you can’t associate the transaction with an account, how do you handle dispute resolution?
