Home made Chicken Pad Thai noodles. A dish with vegetables and egg and chicken with two halves of a crispy spring roll on the side.
Yesterday for dinners with ammi, we had homemade chicken Pad Thai and a spring roll. I did not make the spring roll but bought it from the Mahaweli Reach cafe at Asiri hospital. We like spring rolls.

I didn’t think of it myself. I saw a short of YouTube and tried it out and it tasted great. Ohh yes! These would be great for a potluck. Everyone like them.

No. I just took the paratha, 🫓 the circle, put the stuffing on it and then folded it in half and crimped the edges. It’s my lazy dinner hack 😁
You can fry it as well but I prefer the baked version. It’s puffier and nicer when it’s baked and not oily. And today’s filling was rotisserie chicken with onion, garlic, tomato, and bell peppers with some spices. Then I stuffed the raw parathas with it and folded them and popped them in the oven.
