The eyes should ideally be getting set by default, but there's a color input specifically for that on the eye shader called g_WhiteEyeColor, where you can set it to whatever you want.
Hair is gonna be a similar situation, it's got color values you can change however you want!

The grain is from Blender just needing to work harder, since the shader setup is much more complex. When rendering with high settings that should go away.
The sheen can be reduced by bringing the IOR value closer to 1, Blender has it at 1.5 by default for some reason. Or darken the Specular Tint col

Also make sure that when you're importing everything your Working Color Space in Blender is set to Rec.709 (which it is by default). I've noticed the colors get imported wrong on something like Rec.2020, gonna look into a fix for that.

For detail FFGear (and I think also Meddle now?) adds the little tiles for fine-grain detail, if you haven't used a shader with that it makes a huge difference. FFGear also has a slider for the intensity of them. If that's not enough try adding a slight sharpness filter when compositing.

FFGear has easily accessible sliders for tweaking material properties like saturation, works on all gear. If you find the coloring lacking on the Meddle shaders those could also just get a Saturation node slapped onto them. Or just up the saturation of things like the skin color, easy to do.

My FFXIV themed entry for the "Dream Sequence" render challenge is finished. While brainstorming for ideas I stumbled upon the Dancing Green raid in FFXIV which features a soundtrack with a BPM of 120 and is also synced to the music. What a fitting fight for this, huh?
Nice challenge, was fun :)
