Round 2 tonight with the second half of the fillet. Higher initial oven temps and a shorter baking time meant the exterior of the fillet didn’t overcook. I preferred this.

Haha, you’re not the first person to ask :-) But it’s a bit of a festive dish for me and I’ve been trying to improve my results cooking it.
Yeah, it was a bit OTT… I now know why recipes call for button mushrooms rather than portobellos which I used.
