My version of chirashi bowl when freshdirect has sushi-grade salmon, bluefin, & albacore “leftover cuts”; I soak dried shiitake mushrooms and then sauté them in soy and mirin; then I roll an egg to get that look; pickled shallots and dried seaweed to finish; sushi rice under! #ciacooksjerseycity
