It was a pain to move the cab at all, but it was surprisingly painless once we had the "header" lifted off and confirmed it fit through the door.

Exactly - that's what I feel like would integrate well with allowing "dedicated" or "private" servers. Those could then be instantiated as labellers and anyone can choose which labeller they want to trust/subscribe to. If the Label exists, they count as "verified".
TL;DR: you specifically may not care, but others may and should be given the tools to do so easily.

If it's a Single-Player game and not in a speedrunning or other competitive context: Perfectly fine.
As soon as you have Leaderboards or are looking to verify things for speedruns: if people are given access to fabricate high scores, they will.

Maybe using the idea of a labeler service so when the authority of the game labels a player (or rather a "post"?) as "verified" that chunk of data is globally valid?
Maybe bake it intoo the SDK you are building to HAVE an "authority" that CAN sign a player's data (PGP/GPG?) but have support for clearly-labeled "unverified data" in there, or to make "private servers" easily host their own "verification".
And I think you want signatures, not encryption.
